Novoandina cuisine fuses ancestral Andean wisdom with contemporary culinary techniques. It is based on the use of native ingredients, such as potatoes, quinoa, purple corn, oca, and tarwi. These ingredients have been cultivated for generations using sustainable and respectful methods. Ancient inhabitants developed advanced agricultural systems, such as terraces, and used native seeds to ensure a steady supply of healthy, nutritious food adapted to the high-altitude climate.

Visitors can complement this culinary experience by visiting Misminay and Moray. There, they will learn about regional cuisine and actively participate in planting or harvesting activities, depending on the season, using ancestral techniques. In Misminay, a living Andean community, visitors learn to prepare traditional dishes with local ingredients cooked in clay ovens or pachamancas. In Moray, you will explore the ancient Inca agricultural center known as an agricultural laboratory because of its circular terraces, which were used to experiment with crops and microclimates.

This experience offers deep immersion in living Andean culture, connecting travelers with the land, authentic flavors, and the Inca agricultural worldview. It is a unique experience that nourishes the body and spirit.

Itinerary

The service

  1. Pick-up and departure to Moray
    Departure from Cusco to the Sacred Valley. First stop in Moray, an Inca agricultural center where microclimates and crops were experimented with. Guided tour.

  2. Arrival at the community of Misminay
    Welcome by local families with traditional music. Explanation of their lifestyle, ancestral agriculture, and the use of agricultural terraces.

  3. Agricultural activity (depending on the season)
    Participate in farm work such as planting, harvesting, potato selection, or grinding with mortars. Learn about the spiritual value that the Incas gave to the land and food.

  4. Traditional cooking class
    Participate in the preparation of typical dishes using local products. Learn traditional techniques such as cooking in a clay oven or Pachamanca. Enjoy a community lunch.

  5. Return to Cusco
    Return in the afternoon with spectacular views of the Sacred Valley.
